playing catch up after virus. handmade bunting hanging near the pinecone garland. last minute super warm travel hat crocheted. making breads & drinking some awesome chocolate mint truffle tea (thank you so much dear elizabeth). meeting friends everyday (merci nath !! i love your orange smeg fridge !) & that's the best !

 :: quick & healthy cinnamon + spices moist bread ::

this bread doesn't contain much fat & since i use coconut sugar instead of brown sugar, it can be even lower in sugar. i make a small batch of dough because we are a family of three and it is best eaten on the baking day (you can toast some slices, if any left, the next day to enhance flavors & smells) but of course it can be doubled for a bigger bread.

mix :
1 cup of  (preferably organic) semi or whole flour
1/2 cup of brown sugar
1 tsp baking powder
1/4 tsp baking soda
1 rounded tsp cinnamon
2 tsp speculaas (or pumkin pie type) spices
1/2 tsp salt

add :
2/3 cup buttermilk
1 egg, beaten
1/8 cup (sunflower or a healthy mix of several) oil

bake (heavenly smell) in a loaf pan 180°C/350°F for about 25-30 minutes or until just firm to touch. do not overbake. delicious lukewarm (with a vanilla icecream scoop or fruit marmelade) for breakfast or as an afternoon snack.
