valerie, try again



last summer i had a little adventure with an icecream maker that i had to return as soon as it landed in my mailbox, or almost. i was so disappointed with the experience that i decided to go for the money refund i was offered instead of getting a replacement one. but having noticed since that over here all the icecreams & sorbets sold in stores contain wheat syrup (why wheat ?!! they could choose corn, rice etc instead !!! i'm gluten-free for the ones who don't know me) and being tired of their not-so-satisfying flavors, i decided to order another one (different brand this time).

i received it mid-june and had the time for two attempts only before we left for our swedish vacations. playing it safe for my first times, i simply chose two recipes from the recipe book that was enclosed in the box. you should have seen my face when both came out as... well... not what i expected they would be (i'm trying to be nice & polite here : one tasted like frozen sugar & the other one remained like marmelade).

back home, i read toni's yummy post this past monday and i said to myself : okay i won't let this second machine get me, i'll try again. this time i was determined & improvised my own recipe. this is for you valentina !!



:: eggless apricot icecream ::

* juicy apricots from the market was what i had. i used about 500-600 grams. pureed on low heat as when making jelly, with sugar to your taste, will depend on the fruits too. i added just a pinch of agar-agar "in case", because the apricots were so juicy, but i'm sure it is not always necessary. mix in a blender to make it smooth.

* refrigerate for one night

* add & mix 200 grams of sweetened condensed milk (i used nestlé & here in france it is half a can), 300 grams of (real) greek yoghurt (again, here it is 2 containers of this same brand) + a few drops of almond extract

* follow the machine instructions and tadaa ! ready to eat and delicious. guaranteed !

 
no... really... who do they pay to write their recipe book ?!!! i very much intend to go on the road less traveled from now on, and imagine my own icecream recipes ! any tested & approved ones that you'd like to share ?!

  1. Again, that looks really good! I have a good vanilla recipe. But I'll have to search for it. I'll get back to you on that one. I'm glad you didn't give up on it already...there's nothing better than homemade ice cream...well, not much anyway. :o)

  8. I'm going to try this! I can't remember if I ever told you that I actually found a brand new ice cream maker at the thrift store that works flawlessly! I'm glad you found a recipe you're happy with :) Oh and I have never seen ice cream here with wheat syrup! That is so strange and unusual.

    I just started an e-mail to you, to say hi, so you will be getting that soon.

    For our independence day this past Monday, I made some frozen yogurt using
    I cup of 2% Fage greek yogurt

    2 cups of 0% greek yogurt.

    1/3 cup sugar

    1 teaspoon vanilla extract

    I beans from on vanilla pod.

    mixed them together and used a similar machine. Yummmmmmy

    I want to add some strawberries next time.

  15. Thank you Lecia. I heard of the book on Pinterest, and wanted to dig that... now that you recommend it, I'm very tempted !! Strawberry icecream is a delicious classics, I wish we still could find strawberries at a decent prices here, but it seems they're now out of season in France :(

    Good you didn't give up.
    I have the same with making french croissants; it's a battle to make them perfect, but i don't give up. Most of the recipes i tried aren't making me happy.

    Right now I don't have an ice recipe, but I've found an awesome "food"-blog (gluten free, casein-and sugar free) and I think you would love it, too. Maybe you know it already, if not have fun, I can't stop to read it (and can't stop to dream about to make some yummy sweets of it, but no time....)

  24. Hi, I'm contacting you about an issue with agar agar, I'm sorry it's not related to your ice cream but I found your comment on dessarts about you using the powder and this is driving me crazy. I have been trying to prepare fondant but instead of using gelatin I've been experimenting with agar without success. The recipe calls for 1/4 cup water and 1 tbsp + 2 tsp gelatin but I have used 1/4 c water and 1 tsp agar powder and it completely turns into gel and it doesn't dissolve at all, any ideas?
